Draft: Add Matomo for analytics

Matomo is used on several Turris websites, so let's add it here as well. It will give us some statistics about users behavior, what they visit, what they are searching, so we can improve it or pay attention to it.

Well... I wanted to use override as described here https://squidfunk.github.io/mkdocs-material/customization/#setup-and-theme-structure but I somehow failed to do it as it was not working for me, but this one works. Hopefully, it is alright.
