macOS: add Knot 3.2

Adds a second macOS job that builds the resolver with libknot 3.2 (also keeps 3.1 right now)

OK why not. Though if we keep adding there, for maintainability we should probably switch to something like https://docs.github.com/en/actions/using-jobs/using-a-matrix-for-your-jobs
